If you are looking for an easy, delicious desert to make, these lemon squares are perfect. (They are way better than any other lemon squares I’ve tried.) I have to warn you though if you’re oven is not working properly it’s probably not going to cook. If that is the case, just let it bake for 25 minutes and then stick it it the fridge. It will eventually solidify. Last of all mix it with a spoon not a mixer. Mixing it with a mixer can cause it to not solidify to.

Preheat the oven to 350 degrees.

Ingredients for part one:

1 cup of all-purpose flour

1/2 cup of margarine or butter, softened

1/4 cup of powdered sugar

Mix thoroughly flour, margarine and powdered sugar in a small bowl.

Press evenly with hands in bottom and about 5/8 inch up sides of an ungreased square pan, 8x8x2 inches. (If dough is sticky, flour fingers.) Bake 20 minutes.

Ingredients for part two:

1 cup of granulated sugar

2 teaspoons of grated lemon peel, optional

2 tablespoons of lemon juice

1/2 teaspoon of baking powder

1/4 teaspoon of salt

2 eggs

Beat all of the ingredients in a medium bowl on medium speed until light and fluffy. Pour over hot crust.

Bake about 25 minutes and let stand until cool. Stick in the fridge for at least an hour. Then cut into about 1 1/2-inch squares. Makes about 25 squares.


Then dig in and enjoy.
